Roasted Bourbon Maple Strawberry Sauce


Ingredients:

1 pound strawberries, stems removed and quartered

1 ½ tablespoons Butter EVOO

2 tablespoons bourbon whiskey

2 tablespoons pure maple syrup

1 tablespoon Maple Balsamic Vinegar

Pinch of salt

Preheat oven to 400 degrees. Line a baking sheet (with 1 inch sides) with non-stick foil.  Toss quartered strawberries with Butter EVOO.  Arrange in a single layer on prepared baking sheet and roast in the oven for 15 minutes, stirring once. 

Remove strawberries from oven and transfer to a small sauce pan.  Add remaining ingredients and bring to a boil; reduce heat and simmer for 15 minutes.  Spoon over ice cream, yogurt, waffles or eat by the spoonful!  Enjoy!
