Avocado Egg Toast with Maple Balsamic Glaze
Ingredients:
1 teaspoon Butter EVOO
1 egg
1 slice of whole grain bread, toasted
½ of a ripe avocado, sliced
1 tablespoon Aged Pure Maple Balsamic Vinegar
salt and pepper
Directions:
Heat an 8-inch non-stick sauté pan over medium heat. Add Butter EVOO and swirl to coat the pan. Gently slide one egg into the hot pan and cover with a lid. Cook for 3-5 minutes (depending on how runny you’d like the egg).
While egg is cooking, place avocado slices on top of the toasted bread and gently “smash” to cover. Carefully place cooked egg on top of the smashed avocado. Immediately pour Aged Pure Maple Balsamic Vinegar into the hot sauté pan and swirl for 20-30 seconds (balsamic vinegar will quickly reduce to a glaze). Drizzle balsamic glaze over egg and sprinkle with salt and pepper. Enjoy!
